Preheat oven to 350 degrees and grease a 9x13 baking dish.
Add the breakfast sausage to a pan on the stove over high heat. Cook until no longer pink and transfer to the baking dish.
Using the leftover fat from the pork sausage, lower heat to medium and add the onion. Cook until it becomes translucent then add the potatoes, garlic powder, sea salt and pepper. Cook for 7-10 minutes or until potatoes are fork tender stirring occasionally. Transfer the onion and potato mixture to the baking dish with the pork sausage.
Add the spinach, nutritional yeast and eggs to the baking dish and stir until everything is combined.
Place in oven and bake for 45 minutes.
