Add all the pumpkin bar ingredients to a large bowl and using a large spoon mix until well combined. The dough will be thick. Line a loaf pan with parchment paper and pour the dough in and press into pan. Set aside.
Add the drizzle ingredients to a small bowl and mix well. Drizzle coconut mixture over the bars and place the bars in the refrigerator for 30-60 minutes. Keep refrigerated.
