Carrot Cake Energy Balls

Serves: 12 balls
Ingredients
  • 1 cup pitted dates, soaked in hot water for 10 minutes
  • ½ cup almond butter
  • 1 scoop vanilla high quality grass fed protein powder
  • ⅓ cup unsweetened shredded coconut
  • ¼ cup walnuts
  • ½ cup shredded carrots
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
Instructions
  1. Place all ingredients in a food processor and pulse until the dough forms a ball. Place the dough in the refrigerator for 30 minutes (otherwise it will be very sticky).
  2. Use a cookie scoop to scoop the dough and form into balls. Place each ball on a parchment lined baking sheet. Keep refrigerated.
  3. Enjoy!
