1 cup pitted dates, soaked in hot water for 10 minutes
½ cup almond butter
1 scoop vanilla high quality grass fed protein powder
⅓ cup unsweetened shredded coconut
¼ cup walnuts
½ cup shredded carrots
2 tsp vanilla extract
1 tsp ground cinnamon
Instructions
Place all ingredients in a food processor and pulse until the dough forms a ball. Place the dough in the refrigerator for 30 minutes (otherwise it will be very sticky).
Use a cookie scoop to scoop the dough and form into balls. Place each ball on a parchment lined baking sheet. Keep refrigerated.
