Raw Beet & Apple Salad

Ingredients
  • 3 beets, peeled and cut into small cubes
  • 1 medium apple, cored and cut into small cubes
  • ½ cup roasted cashews
  • juice of 1 lemon and zest of 2 lemons
  • 1 tbsp extra virgin olive oil
  • salt and pepper to taste
Instructions
  1. Once the beets and apples are chopped place all ingredients in a large bowl and mix well. Place in fridge for 30-60 minutes to chill.
  2. Enjoy!
