Serves: 12 oatmeal cups
Ingredients
  • 4 cups rolled oats
  • 2 cups cashew milk or other nut milk
  • ⅓ cup honey
  • 2 tsp vanilla extract
  • 2 tbsp coconut oil, melted
  • 1 tsp ground cinnamon
  • ½ tsp all spice
  • ½ tsp sea salt
  • 1 tsp baking powder
  • ¼ cup coconut unsweetened coconut flakes
  • 1 cup fresh blueberries
Instructions
  1. Preheat oven to 375 degrees and grease a muffin tin.
  2. Add all ingredients except the blueberries to a large bowl and mix well. Gently fold in the blueberries. Fill each muffin tin to the top and bake for 15 minutes.
  3. Let cool and enjoy!
