1 cup full fat coconut milk (the solid part from the can, not the liquid)
1 cup coconut sugar
1 tsp vanilla extract
Dash of sea salt
Optional toppings: crushed walnuts, shredded coconut, enjoy life chocolate chips
Instructions
Line a baking sheet with parchment paper and set aside.
In a small saucepan over medium heat combine coconut milk, coconut sugar, vanilla extract and salt. Stir until completely combined.
Bring caramel sauce to a boil and then let cook for 12 minutes. Then, reduce the heat to low and simmer for 5 more minutes or until the caramel coats the back of a spoon.
Remove from heat and immediately dunk and coat the apples, add the toppings and place on the parchment paper. Place in fridge and let caramel harden for 20-30 minutes.
