Ingredients
  • 2 cups Yukon gold potatoes, chopped in small pieces
  • 6 pieces of bacon
  • 1 cup medley cherry tomatoes, whole
  • 4 eggs
  • salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Place the bacon on a rimmed baking sheeting and bake for 15 minutes. Place the bacon on a plate with paper towel and pat grease.
  3. Increase the oven temperature to 400 degrees. Place the potato pieces on the rimmed baking sheet used for the bacon and toss with the bacon grease and salt and pepper. Place in oven and cook for 10 minutes. While the potatoes are cooking, chop the bacon into small pieces and set aside.
  4. Remove the potatoes from the oven and stir in the bacon and medley cherry tomatoes. Cook for an additional 10 minutes.
  5. While the potato mixture is cooking, place a skillet on the stove over medium heat and cook 4 over easy eggs.
  6. Remove the potato mixture from the oven and separate onto two plates, place 2 eggs on each plate and eat up.
