Coconut Chocolate Energy Balls

Avri loves herself some protein balls and I love that she loves them! It is an easy, fun and yummy way for her to get in a good quality snack full of healthy fats. We make it a little activity too! She loves to help pour in the ingredients, stir the ingredients and her most favorite part is of course taste testing. Sure, they might take longer to make but she absolutely loves, gets to explore with food and is proud of what she made! She usually eats one protein ball with some fruit for her morning snack. This is her favorite snack and she always eats it all!

Protein balls aren’t just great for kids! I will grab one for a little treat after dinner or if I need just a little something to get me to my next meal.

I used Further Foods Chocolate Collagen in these protein balls. Don’t worry, though. If you don’t have any you can use any chocolate collagen or protein powder. I love this collagen because it is made with reishi mushroom which is a mood-booster! Coconut Chocolate Energy Balls

Serves: 12 balls
Ingredients
  • ½ cup packed pitted dates, soaked in warm water for 10 minutes
  • 1 cup unsweetened shredded coconut
  • ½ cup peanut butter
  • 2 tbsp chia seeds
  • 2 scoops Further Foods Chocolate Collagen*
  • 1 tsp cinnamon
  • pinch of salt
Instructions
  1. Place all ingredients into a food processor and pulse until fully combined. Stop and scrape down the sides as needed.
  2. Using a cookie scoop, form into balls and place on a baking sheet. Let chill in the refrigerator before serving. Keep refrigerated.
  3. Enjoy!
