Apple Cobbler Peanut Butter Bars

I am always looking for yummy and fun snacks for baby A. I recently made protein balls which she has never had before and she absolutely loved them. I had to make hers into much smaller balls, otherwise she would shove the entire ball in her mouth at once. She truly is my child!

That gave me inspiration for this new recipe! I took a couple of her favorite things and made them into these fun, healthy and yummy peanut butter bars. These bars can be enjoyed by themselves as a little snack or dessert, or paired with fruit or yogurt. Anyway you have them will be delicious!

To add a little protein to these I used two scoops of Primal Kitchen Vanilla Coconut Collagen Fuel. Feel free to use any protein powder you have on hand. If you have never tried Primal Kitchen products, what are you waiting for! So many of their products are staple items in my pantry and they continuously come out with more amazing products and flavors to existing products. I cannot wait to try their new Peanut Butter Collagen Fuel. But, in the meantime A and I will be snacking on these bars!

Ingredients
  • 1½ cups peanut butter
  • ½ cup dates, pitted and soaked in warm water for 10 minutes
  • 2 scoops Primal Kitchen Coconut Vanilla Collagen
  • ½ granny smith apple, finely chopped
  • 1 tsp cinnamon
  • dash of salt
Instructions
  1. Add all ingredients to a food processor except for the apple and pulse until smooth. Once smooth, remove the blade and fold in the apples.
  2. Add the mixture of a parchment paper lined 8x8 pan and place in the freezer for 2+ hours. Take out 5-10 minutes before eating and enjoy! Keep in freezer.
