Maple Sweet Potato Sausage Patties

I have yet another easy breakfast option for you or the kiddos. Avri loves meat when it is bursting with flavor. She isn’t a fan of chicken, which I get because chicken can be rather boring. But, she loves any type of sausage so I like to make these patties or these Breakfast Sausage Meat Muffins to keep on hand for quick meals or snacks. They are so simple so it makes it easy to whip up a batch rather quickly. I will give one to A for breakfast with some fruit and an egg yolk (she breaks out from egg whites). I will enjoy them too on a bed of sauteed kale with some fruit and will add a couple eggs sometimes too.

Fun fact, I never used to like breakfast sausage until recently. It is like my taste buds changed and now really like it. I even order it while out for breakfast which I would never normally due. Maybe this is just called adulting. Who knows.

If you are looking for a yummy sweet and savory breakfast for yourself or family, make these! This recipes makes over a dozen patties so it makes for a perfect meal prep recipe. Store them in an airtight container in the fridge and whip a couple to create a yummy breakfast with or just to snack on. Enjoy!


Maple Sweet Potato Sausage Patties

Serves: 15 patties
Ingredients
  • 1lb pork sausage
  • 1lb ground turkey
  • 1 small sweet potato, shredded
  • 2 tbsp maple syrup
  • salt and pepper to taste
  • 2-4 tbsp coconut oil for cooking
Instructions
  1. Add the pork and turkey sausage to a large bowl and sprinkle with salt and pepper. Add the shredded sweet potato and maple syrup. Wet your hands and mix everything together until fully combined.
  2. Usually a ¼ measuring cup, create 15 patties.*
  3. Place a large skillet on the stove over medium high heat. When hot add 1 tbsp coconut oil. Add the patties and cook 3-4 minutes each side. Cook in batches to not overcrowd the pan. Add more oil as needed.
  4. Serve with breakfast and enjoy!
Notes
*Wet the measuring cup and your hands. This will make it easier to work with the sausage meat that is usually very sticky.
