Fresh Watermelon Salad

Watermelon is one of those fruits I just crave on a hot summer day. It is the perfect amount of sweet and the juiciness is so refreshing. Baby A had her first taste of watermelon this week and I am happy to report that she loves it!

This Fresh Watermelon Salad would be a fun dish to bring to a cookout this summer. No fancy cooking skills needed for this recipe. Just chop, squeeze, mix and enjoy! Simple as that. I love that mini watermelons are available now. I love me some watermelon, but if you don’t have a crew of at least 15 people you will be living off of a full size watermelon for weeks. #amiright

If you happen to have a full size watermelon or no access to mini ones, you could also make this Summer Watermelon Fruit Salad. Better yet, make these Watermelon Lime and Cucumber Cocktails! These cocktails will definitely be going down this summer!

Ingredients
  • 1 small watermelon, chopped
  • 5 kiwis, peeled and chopped
  • 1 cucumber, peeled and chopped
  • ¼ cup unsalted sunflower seeds
  • 2 heaping tbsp goat cheese
  • ¼ cup mint leaves, chopped
  • zest of 1 lime
  • juice of 1 lime
Instructions
  1. Add all ingredients to a large bowl and gentle mix until fully combined. Store in the refrigerator covered or in an airtight container.
  2. Enjoy!
