Strawberry Banana Brownie Chunk Sherbet

Happy Monday! I hope all the mom’s out there had a great weekend celebrating YOU. I celebrated my very first Mother’s Day and it was perfect. My husband surprised me with a necklace with Avri’s name and birth date on it. I absolutely love it and never want to take it off. We spent all day together, had a delicious brunch at home and grilled out with my parents later in the day. It was a great day celebrating being a mom!

I even celebrated myself by making this dessert! Now that it is finally warming up outside all the frozen desserts are a must. I wanted something simple, sweet, and a little chocolately. Then this happened and it did not disappoint! If I am going to eat ice cream, it has to has chunks in it. It’s just not worth it without chunks of goodness. I used these Enjoy Life Double Chocolate Brownie Cookies and Enjoy Life Chocolate Chips. Sure, I could have made my own cookies or brownies but again, I wanted to keep this as simple as possible. It was Mother’s Day, I didn’t want to work hard but still wanted a yummy treat! This dessert is great to keep in the freezer for a warm summer night treat!


Strawberry Banana Brownie Chunk Sherbet

Ingredients
  • 2 frozen bananas
  • 1½ cup strawberries fresh of frozen, chopped
  • 1 tbsp raw honey
  • ¼ cup cashew milk or other nut milk
  • 5 Enjoy Life Double Chocolate Brownie Cookies, roughly chopped
  • 1-2 tbsp Enjoy Life chocolate chips
Instructions
  1. Add the bananas, strawberries, honey and milk to a high powered blender of food processor and blend until smooth.
  2. Transfer to a loaf pan and fold in the cookies an chocolate chips. Place in freezer for 3-4 hours.
  3. Remove from freezer 5-10 minutes before eating.
  4. Enjoy!
