Mango Blueberry Energy Smoothie Bowl

Now that it is officially spring and getting close to summer I am all about fresh fruits and vegetables in the form of smoothie bowls! There is just something exciting and comforting about a big smoothie bowl topped with my favorite smoothie toppings. I will have a smoothie bowl for breakfast, snack or lunch sometimes. You can customize it just to your liking and add any toppings you enjoy. Smoothie bowls are simply the best because you feel like you are having a treat, but instead you are getting in a nutrient dense meal or snack that will keep you nice and full!

Life has been all sorts of busy lately so quick meals and snacks have been a must. Anything that takes less than 30 minutes to make or doesn’t involve cooking are the meals we have been surviving on lately. Life has its ebbs and flows of busy times and we must learn how to adapt to those changes. When I am busy I know I can’t spend an hour cooking dinner every night so I meet myself where I am at and do the best I can at the time. Some weeks that means we have a fresh meal every night and other weeks we may be eating a lot of leftovers. Meeting myself where I am at allows for me to not stress about what I am “not” doing. It allows for me to keep pushing towards my goals, be proactive and continue on the right track. If you find yourself falling off track when life gets busy, start meeting yourself where you are at and do one small thing each day to help yourself through the busy season.

One thing you can do is make this smoothie bowl! It is quick to make, will get you excited about warm days ahead and will keep you satisfied until your next meal!


Mango Blueberry Energy Smoothie Bowl

Recipe type: Smoothie Bowl
Serves: 1 bowl
Ingredients
  • ½ cup fresh mango, cubed
  • ½ cup fresh blueberries
  • 1 handful kale or spinach
  • 1 cup coconut water
  • 1-2 tsp honey
  • 1 tbsp chia seeds
  • 1 scoop vanilla coconut collagen powder or other vanilla protein powder
  • 1 tsp xanthan gum (optional)
  • 1-2 handfuls ice
  • toppings (optional): additional mango and blueberries, chia seeds, granola, peanut butter
Instructions
  1. Add all ingredients to a high powered blender and blend until smooth. Transfer to a bowl, add toppings of choice and enjoy!
