Strawberry Vanilla Coconut Collagen Muffins

I had a hankering for muffins the other day so I did the only logical thing and made muffins. I’ve been wanting to make muffins using collagen powder for some time now and I am so glad I finally did! I will be using this combo of ingredients to make all the different flavors of muffins. Chocolate chip, poppy seed, raspberry, blueberry, lemon and you get the point…

Collagen is the only powdered protein source I now consume. As I get older, taking care of my inner health, aging and being able to feel my best is becoming much more important to me. I don’t need to be the most chiseled or strongest girl in the gym anymore. I want to feel good, move without any aches and pains and take care of my aging body the best that I can. Collagen has been amazing in all these aspects of my health and I proudly consume it on a daily basis!

I took it religiously when pregnant too. I didn’t get any stretch marks and any aches and pains due to pregnancy was very minimal. A lot of that has to do with my nutrition throughout pregnancy as well, but consuming collagen regularly while pregnant has some major benefits for momma and baby. When a woman becomes pregnant the amino acid, glycine becomes essentials and you have to get it from your diet. Your body does not produce it. Glycine helps the formation of baby’s DNA, internal organs, connective tissue, bones, blood vessels, skin and joints. Collagen is one of the major sources of glycine. You can get a lot of natural collagen, aka, glycine from animal foods like bone broth, slow cooked meat, bone in meat and poultry with the skin. If you are getting healthy doses of these animal foods on a daily basis while pregnant you may not have to supplement with a collagen powder. Quick disclaimer, when consuming any sort of animal food aim for it to be grass-fed, organic and free range. However, if you aren’t able to consume those foods regularly a high quality collagen supplement will also do the trick.

These muffins are already gone and I made them Tuesday. As I was noshing on one this morning before going to the gym I was already thinking about how I wanted to make them next. I am thinking in the form of banana bread with some more fruit and pistachios mixed in! They are also amazing as is, obviously, since they are already gone!


Strawberry Vanilla Coconut Collagen Muffins

Serves: 10 muffins
Ingredients
  • ⅔ cup cassava flour
  • ⅓ cup vanilla coconut collagen
  • 2 eggs
  • ¼ cup almond butter
  • ¼ cup cashew milk
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • pinch of salt
  • pinch of cinnamon
  • ½-3/4 cups strawberries, chopped
Instructions
  1. Preheat oven to 350 degrees and place 10 muffin liners in a muffin tin.
  2. Place all the dry ingredients in a bowl and mix well. Add all the wet ingredients to the same bowl and mix until smooth. Fold in the strawberries.
  3. Using a cookie scoop, scoop batter into 10 muffin cups. Place in oven and bake for 20 minutes.
  4. Let cool and enjoy!
