Spiced Apple and Carrot Collagen Juice

If Mother Nature is going to refuse us spring, I will create my own spring. And I am starting with this Spiced Apple and Carrot Collagen Juice! Last year around this time I was soaking up the sun in Punta Cana. This year the only vitamin D I am getting is in pill form. Every morning in Punta Cana I would start my day off with a workout on the beach and then to a delicious fresh fruit and vegetable juice. They were absolutely delightful. I started my day today with a workout in the gym and had this juice as a midmorning snack. It might not be sunny Punta Cana or the beach, but it will do.

I am always looking for new ways to get more vegetables into my diet. I have been trying to shake things up a bit with my snacks and meals lately and it is giving me some inspiration for fun new recipes! If you don’t have a juicer, no worry my friends. I made this juice using my Nutri Ninja Auto iQ blender. I looooove this blender. Fingers crossed the weather will start heating up because I will be making more juices and smoothies to share with you! If you don’t have a decent blender, do yourself a favor and invest in one. Spiced Apple and Carrot Collagen Smoothie

Ingredients
  • 1 medium carrot, peeled and quartered
  • 1 small apple, cored and quartered
  • ¼ inch piece fresh ginger, peeled
  • 1½ cup water
  • 1 scoop Primal Kitchen Vanilla Coconut Collagen Fuel
  • 2 tsp maple syrup or honey
  • ¼ tsp cinnamon
Instructions
  1. Place all ingredients in a high powered blender and blend until smooth.
  2. Enjoy!
