Chocolate Chip Banana Bread

I hope everyone had a very merry Christmas and happy New Year! Christmas was extra special this year with it being baby A’s first Christmas. She of course was extremely spoiled by her grandparents and aunties. Now it is on to the new year!

If you missed it, yesterday I shared a post, “The only Health and Fitness New Year’s Resolution worth Making“. I have never been one to make any New Year’s resolutions and I don’t recommend others do it either. However, if you read my post you will see that I decided to make a well worth resolution this year. Life is messy and unpredictable so to commit to a goal or resolution that requires a lot of time, restriction, juice cleanses or spending 2 hours in the gym just isn’t realistic for most people. If you are looking to commit to a goal, obtain and maintain results long term and still feel free and flexible, read yesterdays post!

Banana bread is hands down one of the most comforting treats ever. Are you with me? Well, this Chocolate Chip Banana Bread is no different!   • Otto’s Cassava Flour
  • Enjoy Life Dark Chocolate Morsels


Chocolate Chip Banana Bread

Recipe type: Bread
Serves: 1 loaf
Ingredients
  • 3 bananas, mashed with a fork
  • 3 eggs
  • ¼ cup peanut butter or almond butter
  • ½ cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 cups cassava flour
  • ¾ cup enjoy life dark chocolate morsels
Instructions
  1. Preheat oven to 350 degrees and grease a loaf pan with cooking spray or line with parchment paper.
  2. Add all ingredients except for the cassava flour and chocolate morsels to a large bowl. Mix until ingredients are fully combined. Slowly mix in the cassava flour until all flour is fully combined. Fold in the chocolate morsels.
  3. Transfer the dough to the load pan and bake for 55 minutes or until a toothpick comes out clean.
