Leftover Salmon Scrambler

Happy Monday friends! I have been on a bit of a salmon kick lately which is good for you because it inspired me to share this delicious breakfast scramble with you. I used to only cook salmon once ina blue moon and these days I have been making it weekly if not twice a week. I like to make 1-2 extra fillets to make a breakfast scramble with. Most mornings I will have it with sauteed kale and grape tomatoes, but I decided to jazz it up a little bit for some extra ooomph and nutrients. Scrambles are the best because you can truly make it anyway you want. They can be made with any of your favorite veggies, meats, eggs or no eggs, cheese or toppings. In this post a couple months back I share How to Build the Perfect Single Serve Omelette and the exact same principles can be applied to a scramble! If you are getting bored with your breakfast and looking to change it up, make this scramble or build your own!

Switching gears a bit, let’s chat living a healthy lifestyle! In today’s world it can be very overwhelming when it comes to figuring out which “diet” to follow and what is the best way to feel and look the way you want. I put diet in quotation marks because many people assume diets are a restrictive set of rules that must be followed to a tee to lose weight. When really, a diet is simply the way you eat. I eat a diet rich in whole foods with a variety of fruits and vegetables, lean protein, healthy fats and high complex carbohydrates. I don’t have a list of rules I follow, I don’t restrict myself and my weight doesn’t fluctuate a ton. I have been able to find a healthy diet that works for me, is sustainable and that I was able to make a lifestyle. This isn’t easy to do especially today when there are fast food joints on every corner and grocery stores is packed with thousands of highly processed packaged items. I want to help you find your healthy lifestyle your way that works for you! No restrictions and no strict rules. I will help guide and support you as you develop the habits and consistency that are required to live a sustainable healthy lifestyle.

Leftover Salmon Scrambler

Serves: 1
Ingredients
  • 1 salmon fillet, already cooked and roughly chopped
  • ½ tbsp coconut oil
  • 3 eggs
  • 1 tbsp nut milk
  • 6 asparagus sprigs, chopped,
  • ¼ cup grape tomatoes, halved
  • 1 tbsp goat cheese
  • ¼-1/2 avocado, diced
  • salt and pepper to taste
Instructions
  1. Place a small skillet on the stove over medium high heat and add the coconut oil. Once melted add the asparagus. Stirring occasionally cook for 3-5 minutes. Add the salmon and cook for an additional 2-3 minutes. Add the grape tomatoes and cook for an additional 1-2 minutes. Remove the salmon mixture from the pan and set aside.
  2. Add the eggs and nut milk to a small bowl and whisk. Reduce the heat of the skillet and regrease if necessary. Add the whisked eggs and stir continuously. When the eggs are halfway cooked add the salmon mixture back in and the goat cheese and stir continuously until the eggs are fully cooked. Transfer to a plate and top with avocado.
