Chipotle Chili Breakfast Burgers

July 2, 2018 by BrookeWeiss

Happiest of Mondays to you and week of July 4th celebrations! I hope some of you are the lucky ones out there that can enjoy the entire week off of work soaking up this beautiful weather, all the eats and drinks and relaxation. I am one of the unfortunate ones who will only have July 4th off. However, that just means I will still be here working on recipes and content for you all!

Cookouts will be in full force this week so I wanted to be sure to share this burger recipe with you ASAP. It is a definite change up from your typical burger and will give any of your guests a powerful punch of flavor in each bite! If you are hosting a cookout this week, be sure to check out this post on how to create the perfect cookout. It’s easier than you think! Celebration cookouts wouldn’t be complete without cocktails! So, be sure to check out a recent post of mine of Healthy Cocktails to Celebrate July 4th. I’ll be sipping on a mocktail of my Paleo Raspberry Lemonade while everyone else enjoys it with vodka. A cookout wouldn’t be complete without dessert, duh. Last week I shared over 10 of my most favorite healthy indulgences that are refreshing, will keep you cool in the sun and leaving you feeling your best. You can get all of those recipes here.

If you don’t have any cookouts on your horizon, no worries. These burgers are great anytime during the week and would even be a great addition to your weekly meal prep. Happy cookout meal planning and enjoy!

Serves: 6 burgers
Ingredients
  • 2lbs grass-fed ground hamburger
  • 4 tsp chili powder
  • ¼ tsp chipotle chili pepper
  • 2 tsp black pepper
  • 2 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 6 pieces of bacon
  • 6 eggs
  • 1 roma tomato, sliced
  • red leaf lettuce
  • paleo mayo
Instructions
  1. Add all the spices to a small bowl and mix together. Add the ground beef to a large bowl and add the spice mix. Using your hands, work the spices into the meat until fully combined. Form ground beef into 6 burger patties. Set aside.
  2. Preheat your grill (charcoal or gas) and when ready add the burger patties to the grill and cook 4-5 minutes each side. Remove from grill and set aside.
  3. Add the bacon to a large skillet on the stove over medium high heat and cook until crispy. Remove from skillet onto a paper towel lined plate and pat the grease. Set aside.
  4. Reduce the heat of the skillet and cook the 6 eggs over easy. Remove from skillet and set aside.
  5. Build your burger by placing a leaf or two of red leaf lettuce on your plate, place a burger on top of the lettuce, add desired amount of paleo mayo, one piece of bacon, tomato slice, and top it with an egg.
  6. Enjoy!
