Raspberry Banana Collagen Bread

How is it already that last week of June? I feel like summer just started and now it is almost July. Before I know it, August will be rolling around and I will soon be the momma to a sweet baby girl. Let’s hope she gets her daddy’s sweetsy personality because it certainly won’t be coming from me!

This weekend was all about celebrating baby girl W because it was our baby shower! We had it at our family’s cabin on a lake and it was perfect. The weather was perfect, the food was amazing, the decorations were exactly what I wanted, my most important friends and family were there and we were showered with amazing gifts. It was a weekend to remember and we are even more excited to bring baby girl home!

Celebration weekends are a part of life and most times when you are celebrating you have some treats or eat things you don’t typically eat on a regular basis. The food we served at our baby shower either came from my blog, other healthy recipes or were made with cleaner ingredients than the recipe called for. We served a brunch with egg muffins, breakfast meatball, fresh fruit, chocolate protein muffins, this Raspberry Banana Collagen Bread, dairy and gluten free cheesecake, and have a mimosa and blueberry beer bar. Treats are still treats even if they are made with healthier and cleaner ingredients, but I made sure to enjoy any and all the treats with zero guilt because it was a day to celebrate. There is always a time and place to enjoy a piece of cake, ice cream, pizza or any other of your favorite treats. Because that is life. In order to live a sustainable healthy lifestyle it is essential to learn how to properly integrate celebrations and treats into your life. A life of restriction and not enjoying a piece of birthday cake isn’t a way to live, nor is it sustainable.

One of my best tips I want to share with you all is to be proactive and get back on track as soon as you can. Most times you will know when you will be celebrating special events or going out for a special treat so you can be proactive about it. You can think ahead of the meals you will eat leading up to the celebration, how much water you can drink before hand, and you can plan to get back on track with your next meal or right away the next day. Celebrations and treats won’t be something to fear anymore because you will know exactly how to get back on track after the treat and you will be able to fully enjoy the treat completely guilt free.

Let’s chat about this bread a bit! It was perfect to be served with a savory brunch because it adds a bit of sweetness to the meal and like you are also having a bit of dessert. Raspberry Banana Collagen Bread

Serves: 1 loaf
Ingredients
  • 1¾ cups cassava flour
  • ¼ cup Further Foods Collagen Peptides
  • 3 bananas
  • 1 egg
  • ½ cup honey
  • ¼ cup coconut oil
  • ⅓ cup cashew milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp sea salt
  • 6 ounces fresh raspberries
Instructions
  1. Preheat oven to 350 degrees and grease a bread pan or line it with parchment paper.
  2. Add all ingredients except for half of the fresh raspberries to a food processor and blend until smooth. Stop the food processor once or twice to scrape down the sides.
  3. Transfer the dough to the bread pan and fold in the remaining fresh raspberries. Evenly spread the dough over the entire pan. Place in oven and bake for 1 hour or until it passes the toothpick test.
