Chicken Coconut Wrap

Happy Monday from Colorado! I planned a quick trip to Colorado with my mom and sisters to celebrate my 29th birthday and one last little hooray before baby girl arrives. This trip has been amazing! If the hubby and pup were with me I’d stay here forever. We have another full day here and will be heading back Tuesday. We went for a long hike in the mountains, have eaten some amazing food, went on a jeep tour, saw waterfalls and now today will be a day of exploring downtown Denver! I will be doing a recap on the trip later this week so stay tuned!

This recipe is hardly a recipe, but I have posted this on my instagram stories a couple times now and always get questions about it so I wanted to share it here for everyone. This wrap can be complete customize to fit what you like. The most important part that you will for sure want and need though, is the wrap! I buy the Thrive Market brand Organic Original Coconut Wraps. These wraps have a very subtle coconut flavor and are completely gluten free and paleo with the cleanest ingredients. I use these wraps when I have a hankering for a sandwich, breakfast taco, fish and beef taco and I have even added peanut butter and banana to them. You can seriously use them for anything! I have started taking these wraps to work for lunch and they are so easy to prepare and pack to take with me. I love having them on weekends when we are busy and I need to have a quick meal. They are clean, simple and delicious!

Serves: 1 wrap
Ingredients
  • 1 Organic Original Coconut Wrap*
  • Meat options: grilled chicken*, rotisserie chicken, turkey, deli meat
  • Condiment options: avocado mayo*, mustard*
  • Veggie options: spinach, arugula*, kale, grape tomatoes*, shredded carrots, avocado, peppers, etc.
Instructions
  1. Spread your condiments of choice on the coconut wrap evenly.
  2. Add your veggies and meat of choice to one side of the wrap. Tightly roll the wrap to secure the insides so nothing falls out. Cut the wrap in half.
  3. Enjoy!
