Grilled Fruit Kabobs with a Lime Yogurt Drizzle

Have you ever had grilled fruit before? You are missing out if you haven’t and it is so easy to make. When your diet consists of mostly whole foods with minimal processed foods, it can be easy to get in a rut of eating the same foods or meals with not much variety. A lot of times this happens because of our comfort levels. We find healthy foods we like and an easy and manageable way to prepare them so we stick to that routine. Then the boredom sets in with flavor and having the same meals day after day gets old. Am I right?

You don’t know what You don’t know. What I mean by that is that if you don’t learn different cooking techniques or how to venture into a more colorful variety of foods, you simply don’t know how to create a different more flavorful meal. Different cooking techniques can change the entire profile of foods, but if you don’t know the techniques how are you suppose to get those flavors? In the beginning of my health journey I fell victim to the same meal different day routine and it wasn’t until I started incorporating a new recipe a week that I learned there are tons of ways to cook whole foods to get different flavors. I slowly learned and continued to try new things and now I rarely get sick of flavors or meals because I have a large pool of variety to choose from.

Here are a few techniques I recommend trying out one at a time for at least a couple weeks to get a hang of it. After you have one technique nailed down and you are able to consistently do it, try a different skill!

  • using a crockpot
  • roasting vegetables
  • making one new recipe a week
  • adding more leafy greens to one meal a day
  • try one new fruit or vegetable a week
  • shop at a farmer’s market

Living a healthy lifestyle through whole foods can be enjoyable and flavorful. Venturing out and trying new things is the name of the game. Just like these grilled fruit kabobs, did you even know grilling fruit was a thing? Fruit prepared this way gives a completely new flavor profile and can be your answer to eating more fresh fruit if your diet lacks in it. Grilled Fruit Kabobs with a Lime Yogurt Drizzle

Recipe type: Appetizer/Dessert/Snack
Serves: 4-6 kabobs
Ingredients
  • 1 pineapple, peeled and cubed
  • 1 mini watermelon, peeled and cubed
  • 2 peaches, pit remove and cut into wedges
  • Juice from 1½ limes
  • ¼ cup Greek Yogurt
  • 1 tbsp honey
  • 4 -6 kabobs skewers
Instructions
  1. Fire up your charcoal or gas grill (I used charcoal).
  2. While the grill is heating, add the fruit to the kabob skewers in any desired order and place on a cooking sheet. Squeeze the juice of 1 lime over the fruit kabobs. When the grill is ready, add the kabobs and cook for 4-5 minutes. Flip the kabobs and cook for an additional 4-5 minutes.
  3. While the kabobs are cooking, combine the Greek yogurt, honey and juice from ½ lime to a small bowl. Mix well and let chill in the refrigerator.
  4. Remove the kabobs from the grill and place them back on the cooking sheet. With a small spoon, drizzle the Lime Yogurt mixture over the kabobs. Serve immediately and enjoy!
Notes
You will have leftover pineapple and watermelon. Keep any leftover kabobs and Lime Greek Yogurt Drizzle in the refrigerator.
