Chocolate Banana Bread

What a Monday! Do you believe in karma? I don’t necessarily believe in karma, but I believe that good people will be blessed with amazing things and not given anything they can’t handle. Life can be going along holly and jolly and all of a sudden you are smacked in the face and dropped on your butt. Those situations may seem life shattering at the moment and you have no idea how you will ever make it through, but remember, you are never given anything you can’t handle. You may have to ask for help, use new resources or just struggle for awhile but you will get past it.

Things happen and life gets really hard. Handling those hard times with grace, positivity and persistence is what will get you through them faster and you will be a stronger person for it. This happens with health goals, too. The beginning is great because you are consistent, seeing changes and motivated. Then, a few weeks go by and the motivation slowly declines, results start to slow and you start falling into old habits. Some people will surrender and go back to what they were doing before, but the strong, willing and able will power through the difficult times. If living healthy was easy, everyone would be doing it! Living healthy is hard in today’s society and road blocks will happen. It is how you handle the road blocks, setbacks and plateaus that will define your journey and progress. You will have to dig deep at times to find motivation and push through, but remember, you are never given anything you can’t handle. You got this!

This Chocolate Banana Bread is perfect for a chocolatey dessert after dinner, sweet pastry to go with breakfast or just a yummy snack any time of day!

Serves: 1 loaf
Ingredients
  • 1 cup cassava flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 3 large brown bananas
  • ½ cup coconut oil, melted
  • ½ cup coconut sugar
  • 1 egg
  • ⅓ cup almond milk
  • 1 tsp vanilla extract
  • 1 cup + ¼ cup enjoy life chocolate chunks
Instructions
  1. Preheat oven to 375 degrees and line a loaf pan with parchment paper.
  2. In a large bowl add the bananas, coconut oil, vanilla extract, almond milk and egg and with a hand-mixer mix until smooth.
  3. In a medium bowl add the cassava flour, cocoa powder, baking soda, salt and coconut sugar. Mix until well combined. Add the dry ingredients to the wet ingredients and with a hand-mixer mix until smooth and all ingredients are combined. Fold in 1 cup enjoy life chocolate chips.
  4. Transfer the dough to the parchment paper lined loaf pan and smooth out evenly. Top with the remaining chocolate chunks.
  5. Place in the oven for 50 minutes or until it passes the toothpick test. Let cool for 15-20 minutes.
  6. Enjoy!

    I don’t usually use cassava flour. Could I use almond flour in replace would it be the same amount?

      Hey Tanya! I have never made this with almond flour so I don’t know how they would turn out. I do know that the ratio would be different though. Cassava flour is great and so easy to bake with. I would for sure make this recipe with it!
