Sheet Pan Chicken Tenderloin Dinner

Is anything better than making a delicious meal for your family with the use of only one pan? I think not! One pan dinners have been my jam lately and that is because they are so quick, easy and have minimal clean up! I spend enough time in the kitchen washing dishes so if I can limit dinner to one pan, that’s a win. Believe it or not, I was making one pan dinner recipes before I ever even heard of “one pan dinners.” I’ve actually made eight already and I’m sharing another one with you today!

December is an incredibly busy time of year so if I can save time in the kitchen, I’m going to do it! One pan dinners are great for throwing dinner together quick and an even quicker cleanup process, but they are also great for leftovers! I love to add a bunch of different vegetables to these recipes and store the leftovers in the fridge for lunches. A lot of these recipes don’t even need additional sides, but sometimes you can change it up a bit and enjoy the leftovers over a baked sweet potato, rice or leafy greens.

Sheet Pan Chicken Tenderloin Dinner

Recipe type: Entree
Serves: 4-6
Ingredients
  • 1 lb boneless chicken tenderloins, chopped
  • ½ red onion, peeled and chopped
  • 1 zucchini, chopped
  • 1 cup asparagus, chopped
  • 1 cup mushrooms, sliced
  • ½ cup cherry tomatoes
  • 2 tbsp ghee
  • 2 garlic cloves, minced
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp sea salt
  • ¼ tsp black pepper
Instructions
  1. Preheat oven to 450 degrees and add the chicken and vegetables to a large bowl.
  2. Melt the ghee and pour it over the chicken and vegetable mixture. Add the garlic and seasonings and stir until chicken and vegetables are fully coated.
  3. Pour the mixture onto a large sheet pan and cook for 30 minutes.
  4. Enjoy!
