Macadamia Nut Bars

Happy Monday! Whether it is Monday or the weekend I choose to be happy! I choose to be happy because when I am happy I notice other aspects of my life go much smoother and when challenges are thrown at me, I am able to handle them much easier. Mondays don’t have to be your least favorite day of the week if you design a life you are excited to live every single day. And that is exactly what I am doing. My dream and goal in life is to live a life I don’t want to take a vacation from. I am determined to live a life of passion, build a fulfilling career and do more of the things I love. As much as I wish I could snap my fingers and have that dream come true, I need to put in the work to make it happen first. Instead of complaining that I don’t have it all, I choose to be happy with what I have right now.

Everyday of my life isn’t always sunshine and rainbows, I get unmotivated, I have bad days and feel like my dream future is slipping through my fingers. It is what I do and how I handle those days that will shape my future. Instead of letting those bad days run my life, I am persistent and push through the challenges. There are days I feel like the world is against me and those are the days I must choose happiness over anything else. I don’t always choose happiness at first. When everything is going wrong and your ideal life seems so far away how the heck are you suppose to be happy? But, sometimes a simple smile and look at my gratitude list is all I need to choose happiness and push forward. I choose happiness because it is good for my health.

Cassava flour is my new favorite flour to bake with and I buy mine from Thrive Market. This baking flour is derived from 100 percent yuca root vegetable. It is gluten, grain and nut free and has the same taste and texture of traditional wheat flour. My most favorite part, it can be used at a 1 to 1 ration of wheat flour which will make baking that much easier! This flour is becoming much more popular and can even be found on the shelves of natural grocery stores. I will be making more recipes with this flour so you better get your hands on some! In the meantime, enjoy these Macadamia Nut Bars!

Recipe type: Dessert
Serves: 6 bars
Ingredients
  • 1 cup cassava flour
  • ½ cup coconut sugar
  • ½ cup raw honey
  • ½ cup grass fed butter or coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • dash of sea salt
  • ¼ cup enjoy life chocolate chips
  • ½ cup macadamia nuts
Instructions
  1. Preheat oven to 350 degrees and grease an 8x8 baking dish with oil of choice.
  2. Add the cassava flour, coconut sugar and salt to a bowl and sift together until well combined and no chunks remain.
  3. In a large bowl add the honey, butter, egg and vanilla extract and whisk until well combined. Add the dry ingredients to the wet ingredients and using a large spoon mix until fully combined. Fold in the chocolate chips and macadamia nuts.
  4. Add the dough mixture to the baking dash and evenly spread out into the entire pan. Bake for 25 minutes.
  5. Let cool and enjoy!
