Edible Cookie Dough

It hasn’t quite hit me yet that in just a week and a half I will be on my way to Austin, TX for my first Spartan Race of the season! I have been putting in the work, staying on top of my nutrition and am ready to see what I can bring to the table on race day. I’m going into this race with the only expectation to have as much fun as I can and take in the new experience.

Just 15 short weeks ago I set my mind to training for my first Spartan Super Race. I decided to fully dedicate to training and fueling for an intense obstacle course race. I said goodbye to my comfort zone of body building style training and welcomed the uncomfortable feeling of obstacle course race training. In these last few months I have pushed harder, ran further and dug deeper than I ever have before and I can honestly say I have loved every last bit of it. Don’t get me wrong, there were days I would have rather stayed on the couch or skipped a few rounds of burpees. However, I remembered that I 100 percent dedicated myself to this process and made a promise to myself that I would give everything I had each and every day. So, I would get up off the couch or power through my burpees. You can do anything you set your mind to and I set my mind to training and completing a Spartan Super Race so that is exactly what I am going to do.

Recipe type: Dessert
Serves: 2-4
Ingredients
  • ½ cup oat flour
  • ¼ tapioca flour
  • 3 tbsp unsalted grass-fed butter, melted
  • 2 tbsp coconut oil, melted
  • 2 tsp raw honey
  • 1 tsp vanilla extract
  • ¼ cup enjoylife chocolate morsels
  • Dash of sea salt
Instructions
  1. Place all ingredients in a bowl except for the chocolate morsels and stir with a spoon. Once fully combined, fold in the chocolate morsels. Enjoy!
