Chia Seed and Lemon Pancakes

Are you living your ideal life? Do you wake up everyday excited to get your day started and make an impact? A year and a half ago I found myself as a walking zombie just making it through my day to day activities. My energy and mood were suffering which in turn made it difficult to give it my all in my workouts. Plopping my ass down on the couch when I got home was all I looked forward to. Fast forward to today and my energy is up and stays up throughout the entire day, my mood is ten times happier and my workout and evening activities are my favorite part of my day. What changed?

The way I was fueling my body and the people I chose to surround myself with changed. Even though I was eating healthy by filling my plate with whole foods and lots of veggies and protein my body was still lacking the necessary nutrients it needed. How could that be if I was eating whole foods you ask? I touched base on this awhile ago and want to talk about it again. Our food does not have the nutrient density it did 10, 20, 30 plus years ago. The soil our food is growing in is becoming less and less nutrient filled because of the herbicides, pesticides and insecticides that was put onto the crops when growing. Our animal meat is becoming less healthy because large farms are pumping them full of hormones, steroids and antibiotics. Could you eat 8 oranges in one sitting? Well you might have to if you want to get the same nutrients from one orange 20 years ago.

Not only did I find a solution of supplementation to better fuel my body and give it the nutrients it deserves, I have been able to befriend a community of people who feel the same happiness and joy for life as I do. We praise each other, not judge each other. We cheer each other on, we don’t bring each other down. We put our own successes in front of each others, not take advantage of each other. I have met some of my closes friends on my fit journey.

So let me ask you this again, are you living your ideal life? I might not be living my life vision, yet, but I can damn well assure you I am well on my way. If you aren’t and not doing anything about it, I encourage you to reevaluate things. What is your nutrition like? Who are you surrounded by? Are you stresses? How is your mental health? Seriously ask yourself these things and make an action plan for any of these areas that are lacking. Life is precious and not living up to your full potential and happiness isn’t worth it.

Chia Seed and Lemon Pancakes

Recipe type: Pancakes
Serves: 6-8 pancakes
Ingredients
  • 3 eggs
  • ½ cup plus 4 tblsp almond milk
  • ½ coconut flour
  • ½ cup tapioca flour
  • Zest from ½ lemon
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • ½ tsp baking powder
  • ½ tsp baking soda
  • Dash of sea salt
Instructions
  1. Place the eggs, almond milk, lemon zest, honey and vanilla extract in a large bowl and mix well. In a separate bowl swift together the coconut flour, tapioca flour, baking soda, baking powder and salt. Combine the dry ingredients with the wet ingredients and mix until smooth.
  2. Add the chia seeds to the pancake batter and mix well. The batter will thicken due to the chia seeds.
  3. Heat a large skillet over medium low heat and grease the skillet. Cook the pancakes for 1 minute (give or take) on each side.
  4. Serve hot with your choice of toppings.
