Strawberry Fudge Cookies

If you saw Black Bean Burger on a menu, what would you think? Would you think it was a burger made from black beans or would you think it was a hamburger with black beans on it? It is totally a burger made from black beans, emiright?! The hubster and I went out to dinner the other night and he tells me he is going to get the Black Bean Burger. Knowing him, I knew he didn’t know what exactly a Black Bean Burger was so I said, you know that isn’t a real burger right? He looks at me puzzled so I had to explain to him what it was. He goes, oh I thought it was like a Mexican burger with black beans on it! I was laughing so hard but wasn’t all that surprised either. When we first started dating, when he would get a side salad he never knew what French dressing was so he would always order “the red stuff.” He’s such a dork…but my dork 🙂

This was a good weekend, a weekend where we got a bunch done. Did you have a good weekend? On Saturday I spent the day surround by a bunch of like minded souls and it was so empowering and motivating. The older I get the more I realize how important it is to surround yourself with kind, positive, determined and like minded people. The more you are around people that you aspire to be like, the more determined you will become. If you hang around crabby and negative people all the time, you will probably turn into a crabby and negative person. Choose wisely my friends because it is amazing how much one person or a couple people can impact your life in a positive way.

These cookies are damn good. Tooting my own horn here for a quick sec. They are extremely easy to make and the ingredients are easy to find. You need to make these right now!

Recipe type: Dessert
Ingredients
  • 1½ cup almond flour
  • 1 egg
  • ¼ cup coconut oil
  • ½ cup cocoa powder
  • ½ cup coconut sugar
  • ½ tsp baking soda
  • 2 tbsp maple syrup
  • ½ cup enjoy life chocolate chips
  • ½ cup strawberries, thinly sliced
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl combine all ingredient except chocolate chips and strawberry slices and mix well with a spoon.
  3. Once ingredients are mixed, fold in the chocolate chips and strawberries.
  4. Place cookie balls on the baking sheet and bake for 10 minutes.
