Turkey and Vegetable Meatballs

Ingredients
  • 1 lb ground turkey
  • 4 large carrots
  • 1½ cups broccoli florets
  • ½ yellow onion
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • 1 tsp black pepper
Instructions
  1. Preheat oven to 400 degrees
  2. In a food processor, combine carrots, broccoli and onion and process for only about 5 seconds or until the veggies are chopped into really small pieces. You don't want to process too long so it turns to mush.
  3. Place the turkey, veggies and spices in a large bowl. With your hands, mix well.
  4. Use a ⅓ cup to measure out the meat and form into balls.
  5. Place on a baking sheet and cook for 25-30 minutes.
