Buffalo Ranch Paleo Stuffed Peppers

- 4 boneless skinless chicken breasts
- 1 medium onion, sliced
- ½ tsp of each: dried parsley, dried dill, dried chives, garlic powder, onion powder
- sea salt and pepper to taste
- 4 peppers (feel free to use any color - I used green because they were on sale!)
- ½ cup Frank's Hot Sauce
- ¼ cup grass-fed butter
- Extra butter or fat of choice for greasing and baking
- Preheat oven to 350 degrees.
- Cut the top off of each pepper and clean out the seeds, set the pepper aside.
- Mix your dried spices together in a small bowl.
- Place your sliced onions on a greased or parchment paper lined baking pan and place the chicken over the onions.
- Sprinkle chicken with salt and pepper and then the seasoning mix.
- Place a small pat of butter or other choice of fat over each chicken breast.
- Bake for 25-30 minutes or until chicken is cooked through.
- While chicken is cooking, melt the cup butter in a pot over medium low heat then mix in the hot sauce, set aside.
- Once chicken is cooked, cut the chicken and onions in small bite size pieces.
- Combine the chicken with the hot sauce mixture and mix well.
- Spoon chicken mixture evenly in all 4 peppers.
- Place stuffed peppers in a baking pan.
- Bake for 35-40 minutes or until peppers are softened to your liking.
- Serve with guacamole or sliced avocado and eat up!
