On-the-go Paleo Blueberry Muffins

Ingredients
  • ½ cup coconut flour
  • ¼ tsp baking soda
  • ½ tsp sea salt
  • 5 large eggs
  • ½ cup melted coconut oil
  • ⅓ cup honey
  • 2 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • ½ cup fresh blueberries
  • •1 cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. Line muffin tin with liners or grease with coconut oil.
  3. Combine the dry ingredients in bowl except for the berries and nuts and sift together.
  4. Combine the wet ingredients in separate bowl and mix well.
  5. Combine the wet and dry ingredients and mix until no clumps.
  6. Fold in berries and nuts.
  7. Add muffin mixture to muffin tins about ¾ full.
  8. Place in oven and bake for 22 minutes.
  9. Remove from oven and let cool and eat up!
