Preheat oven to 425 degrees. Cut each sweet potato in half lengthwise. Coat the cut side of the sweet potato with coconut oil and place cut side down on a baking sheet. Place in oven for 35 minutes or until soft to the touch.
Remove the sweet potatoes from the oven and peel off the skin. If the sweet potatoes are cooked enough, the skin should come off very easily.
Add the sweet potato and rest of the ingredients (besides the toppings) to a food processor and blend until smooth.
Enjoy with toppings of choice!
