Ingredients
  • 1 banana
  • 1-2 tbsp almond butter (or any nut butter)
  • 1-2 tsp enjoy life chocolate chips
Instructions
  1. Preheat oven to 350 degrees*
  2. Slice the banana the long way but not all the way through. Start about a half inch away from the stem and ended about a half inch from the other end. Make sure you do not slice all the way through the banana.
  3. Gently open the banana to form a "boat." Again, be careful to keep the banana in one piece.
  4. Stuff the banana with your nut butter. I found it easy to place some almond butter on a tip of a sharp knife and gently place it in the banana.
  5. Press the chocolate chips into the almond butter. See picture below.
  6. Place a thin layer of almond butter to cover the chocolate chips.
  7. Wrap banana in tinfoil and place in over for 10-15 minutes.
  8. Enjoy!
Notes
Depending on the ripeness of your banana will depend on how long it should cook. I cooked mine for about 15-20 minutes because it wasn't very ripe. If it is already ripe and a bit soft, I would check it at the 10 minute mark. Just gently squeeze the banana and if it feels soft (your fingers can make an indent in it) it should be ready!
