Farmer's Market Roasted Carrots

- 1 bundle of fresh medley carrots, stems removed
- 1 tbsp coconut oil or ghee
- 1 tbsp fresh ground thyme
- 1 tbsp fresh ground rosemary
- salt and pepper
- Preheat oven to 425 degrees.
- Toss the carrots with the coconut oil and herbs and spices and place on a baking sheet. Place in oven for 35-40 minutes.
