Medley Tomato Salad

Ingredients
  • 2 cups medley cherry tomatoes, cut in half
  • 1 large cucumber, peeled and chopped
  • 2 cups broccoli florets, chopped into small pieces
  • 1 tbsp fresh parsley
  • 2 tbsp. extra virgin olive oil
  • juice of 1 lime
  • salt and pepper to taste
Instructions
  1. Add all ingredients to a large bowl and mix well.
  2. Place in refrigerator for 30 mins to an hour to cool and set.
  3. Enjoy!
