Veggie Chicken Stir Fry

Ingredients
  • 4 boneless skinless chicken breasts, cubed
  • 3 tbsp coconut oil
  • 2 tbsp extra virgin olive oil
  • 4-6 carrots, peeled and chopped
  • 2 cups sliced mushrooms
  • 1 green bell pepper, chopped
  • 2 cups broccoli florets, chopped
  • ¼ coconut aminos
  • salt and pepper to taste
Instructions
  1. Place a large pot on the stove with the coconut oil on a medium low heat.
  2. When oil is melted, add in chopped veggies. Add salt and pepper and mix well and cover. Let veggies steam for about 15-20 minutes only stirring occasionally.
  3. While veggies are steaming, add your cubed chicken breast to a skillet over the stove with the olive oil and salt and pepper. Cook until cooked through or golden brown on the outsides.
  4. When chicken is fully cooked stir it in with the veggies. At this point your veggies should be fully cooked. Lower heat to low and keep veggie chicken mixture uncovered.
  5. Stir in coconut aminos to veggie chicken mixture and let stand for about 5 minutes.
  6. Dish up and dive in!
