Kale Summer Salad

Serves: 4-8
Ingredients
  • 1 bunch kale, thinly sliced
  • 1 bunch red leaf lettuce, thinly sliced
  • 2 cups fresh cherries, halved and pitted
  • 6 ounces fresh blueberries
  • 1 cup cashews, roasted and lightly salted
  • ⅓ cup (+/-) crumbled goat cheese
  • For the Dressing
  • ⅓ cup extra virgin olive oil
  • 1 tbsp white balsamic vinegar
  • 2 tbsp fresh squeezed lemon juice
  • dash of salt and pepper
Instructions
  1. Combine all the salad ingredients in a large bowl and set aside.
  2. Combine all the dressing ingredients in a small mason jar. Secure the lid and shake vigorously for 10 - 20 seconds until well combined.
  3. Pour the dressing over the salad mixture and gently toss until everything is well combined and coated with dressing*
Notes
If you are not serving right away, place the dressing and salad (covered) in the refrigerator separately and add the dressing just before serving.
