Beef Stir Fry

Ingredients
  • 1 lb stew meat
  • 2 garlic cloves, minced
  • 2 large carrots, peeled and chopped
  • 2 cups snow peas
  • 2 cups broccoli
  • 1 red pepper, chopped
  • 1 can (5 oz) water chestnuts, drained
  • 1 tbsp ghee
  • ¾ cup coconut aminos
  • 1 tbsp tapioca flour
  • salt and pepper to taste
Instructions
  1. Place a stir fry pan on the stove over medium high heat and add the stew meat. Cook until browned. Remove the meat from the pan and set aside.
  2. Reduce the heat to medium and add the ghee. Add the garlic and cook for 1 - 2 minutes. Add the rest of the vegetables, a little salt and pepper and mix well. Let cook for 10 - 15 minutes stirring occasionally. Then, add the cooked stew meat, coconut aminos and tapioca flour and mix well. Let cook for an additional 5 minutes.
  3. Serve immediately over rice or cauliflower rice.
