Plantain Egg Scramble

Ingredients
  • 1 plantain, sliced
  • 4 large eggs, whisked
  • 1 red bell pepper, chopped
  • 2 handfuls spinach
  • 1 rosemary sprig
  • 2 tbsp coconut oil
  • ½ avocado
  • salt and pepper to taste
Instructions
  1. Melt the coconut oil in a large skillet over medium high heat. Once the coconut oil is hot, add the sliced plantains and cook 1 - 2 minutes on each side or until golden brown. Remove the plantains from a pan and place on a plate with paper towel, sprinkle with sea salt.
  2. Bring temperature of stove to medium heat and add the bell pepper. Cook for about 5 minutes before adding the spinach. Once the spinach is starting to wilt, add the eggs and rosemary and continuously stir the mixture until the eggs are fully cooked. Fold in the cooked plantains.
  3. Serve immediately and top with avocado.
