Place the eggs, almond milk, lemon zest, honey and vanilla extract in a large bowl and mix well. In a separate bowl swift together the coconut flour, tapioca flour, baking soda, baking powder and salt. Combine the dry ingredients with the wet ingredients and mix until smooth.
Add the chia seeds to the pancake batter and mix well. The batter will thicken due to the chia seeds.
Heat a large skillet over medium low heat and grease the skillet. Cook the pancakes for 1 minute (give or take) on each side.
Serve hot with your choice of toppings.
