Add the potatoes to a pot, cover with water and place on stove over high heat. Bring to a boil. Once the potatoes are fork tender drain the water. Add the oil, garlic and seasoning and stir until the potatoes are fully coated.
Spread the potatoes out on a baking sheet and gently smash with the back of a fork. Place potatoes in the oven and let roast for 30 minutes.
Serve immediately.
