Rosemary and Garlic Smashed Potatoes

Ingredients
  • 2 cups gourmet medley potatoes
  • 2 tblsp avocado oil
  • 2 garlic cloves, minced
  • 1 tbsp dried rosemary
  • ½ tsp sea salt
  • ¼ tsp black pepper
Instructions
  1. Preheat oven to 425 degrees.
  2. Add the potatoes to a pot, cover with water and place on stove over high heat. Bring to a boil. Once the potatoes are fork tender drain the water. Add the oil, garlic and seasoning and stir until the potatoes are fully coated.
  3. Spread the potatoes out on a baking sheet and gently smash with the back of a fork. Place potatoes in the oven and let roast for 30 minutes.
  4. Serve immediately.
