Banana Bread Chia Pudding and a Snapshot of a Day of my Eats

Ingredients
  • 1 cup cashew milk (or other nut milk)
  • 1 banana
  • 1 tbsp almond butter
  • 2 tbsp pure maple syrup
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • pinch of salt
  • small handful of walnuts
  • ¼ cup chia seeds
Instructions
  1. Place all ingredients except for the walnuts and chia seeds in blender and blend for 10-15 seconds. Pour banana mixture into a large jar, add the chia seeds and walnuts. Place the cover on the jar and shake well and place in the refrigerator for 4+ hours.
  2. Top with additional banana and walnuts if desired and dig in.
