Herb Infused Sweet Potato Wedges

Ingredients
  • 2 large sweet potatoes, skin on and cut into wedges
  • 4 cloves garlic, minced
  • ½ tsp salt, black pepper and garlic powder
  • 1 tbsp fresh ground parsley
  • 2 tbsp fresh ground thyme
  • 2 tbsp coconut oil
Instructions
  1. Preheat oven to 425 degrees.
  2. In a small bowl combine garlic, salt and pepper, garlic powder, parsley, and thyme.
  3. Place the sweet potato wedges in a 1 gallon Ziploc bag, toss in the spice mixture, add the coconut oil and seal the bag. Shake the bag until the sweet potato wedges are fully coated.
  4. Spread out on a baking sheet and cook for 15 minutes. Toss or flip the sweet potato wedges and cook for another 15 minutes.
  5. Enjoy!
