2 large sweet potatoes, skin on and cut into wedges
4 cloves garlic, minced
½ tsp salt, black pepper and garlic powder
1 tbsp fresh ground parsley
2 tbsp fresh ground thyme
2 tbsp coconut oil
Instructions
Preheat oven to 425 degrees.
In a small bowl combine garlic, salt and pepper, garlic powder, parsley, and thyme.
Place the sweet potato wedges in a 1 gallon Ziploc bag, toss in the spice mixture, add the coconut oil and seal the bag. Shake the bag until the sweet potato wedges are fully coated.
Spread out on a baking sheet and cook for 15 minutes. Toss or flip the sweet potato wedges and cook for another 15 minutes.
