Sweet Potato Toast 3 Ways

Ingredients
  • 1 sweet potato
  • coconut oil
  • For the toppings:
  • 1 tbsp almond butter
  • Cinnamon and drizzle of honey
  • 1 egg, medium cooked
Instructions
  1. Preheat oven to 400 degrees.
  2. Cut off the two ends of the sweet potato and slice the sweet potato the long way - about ¼ inch each slice.
  3. Lightly brush both sides of the sweet potato slices with coconut oil.
  4. Cook for 30 minutes flipping halfway through.
  5. Add toppings of choice and enjoy!
Notes
With any leftover sweet potato toast, keep refrigerated and pop in the toaster to reheat
