Single Serve Apple Crisp

Happiest of Mondays to you! It’s going to be a busy week for us because my husband and I are both in a wedding on Friday. Typically, it would be no big deal but now we have a newborn thrown in the mix. It may be a busy couple days once the wedding festivities kick off to juggle the responsibilities of being in the wedding party and caring for our little babe. But, it is doable! Whenever we chatted about having kids we always said how we didn’t want our lives to drastically change and stop doing the things we enjoy. The both of us being in a wedding will be a challenge, but we will make it work because we want to be there for our friends and having a newborn isn’t going to stop us from doing that!

Every day since bringing Avri home has been different and we have a new way of life to get used to. Each day has its own challenges and difficulties, but each day also brings new memories and joys. I am a very routined person and when I think we have a good rhythm and routine going, she decides to switch things up. The best thing I have found that works for us to continue to live our life and healthy lifestyle is to go with the flow. I plan my weeks as much as I can as far as grocery shopping, meals, blog and coaching work and so on. Sometimes, meaning most days, I have to throw those plans out the window and go with the flow of Avri. For example, I have sat down four times to get this recipe posted. Everytime I think I have time to get it up she decides she is hungry, needs to be changed, wants to be held or just wants to chat with me. And make that five times… I wouldn’t change any of this for the world because she has brought such joy into our lives. We will go through some ups and downs, we will establish a routine when she is old enough and life will go on!

Life is unexpected, things will happen we can’t control and we will be thrown off our routines. I’d love to say I have all the answers of how to handle being thrown off our game, but honestly I am still figuring it out myself. What I can say is, taking it one day at a time, going with the flow and giving yourself some grace in new situations will help to establish a new routine or to get through a more challenging time with ease.

Over the years my dad has grown himself a little apple orchard and every fall I get so excited for the harvest! I recently got my hands on some of his apples and I knew I wanted to make a recipe with them. Last fall I made this Apple Crisp which is bomb and I was really craving it, but didn’t have the time to make the entire dessert. So instead, I took less than 10 minutes and threw this together instead!

Serves: 1
Ingredients
  • 1 medium apple, cored and chopped
  • 1 tbsp honey, divided
  • ¼ tsp cinnamon, divided
  • 1 tsp fresh lemon juice
  • 1 tbsp organic unsalted butter, cut into small pieces
  • 1½ tbsp cassava flour
  • 2 tbsp gluten free rolled oats
  • dash of salt
Instructions
  1. Add ½ tbsp honey, ⅛ tsp cinnamon and lemon juice to a microwave safe bowl and mix well. Add the chopped apples and mix until the apple chunks are fully coated.
  2. In a separate small bowl add the remaining ½ tbsp honey, ⅛ tsp cinnamon and butter, cassava flour, oats and salt. Mix until fully combined.
  3. Add the oat mixture on top of the apples. Microwave for 2 minutes.
  4. Enjoy!
