Greek Yogurt Fudgesicles

Fun fact Monday! I have a bachelors degree in Mass Communications with an emphasis in Public Relations. I have done event planning since graduating college 6 years ago and even though I now have a nutrition coaching business and this blog, I still plan events! In January I was hired as a subcontractor to coordinate the employment for a large outdoor country music festival, Country Jam USA. I worked for this festival full time a few years back and even though it wasn’t my forever home, they asked me to come back for a bit. Why am I telling you this? Because the festival is THIS week! Life has been crazy lately and this week will be the height of it. I will do my absolute best to get recipes posted and content on my instagram and facebook page. However, I may become a bit radio silent come Wednesday through Sunday.

Speaking of fun facts, here are a few other things you might not know about me!

-I am Level 1 Precision Nutrition Certified

-I did a Figure Competition in 2016 and placed 4th and 5th in my two classes

-Last year I competed competitively in 4 Spartan Races and became obsessed

-I plan to get back to Spartan training/races as soon as I can once baby is here

-I am 34 weeks pregnant TODAY

-I have an extra rib

-I was blonder than blonde as a child

-I was strict paleo for 3 years

-I now live a balance healthy lifestyle by eating the foods that make me feel my best, working out regularly (even through pregnancy) and treating myself to the occasional treat

-I am extremely passionate about helping others find their balanced healthy lifestyle

Okay, okay enough about me! Let’s get to these Greek Yogurt Fudgesicles because they are real good! There are only 4 ingredients and besides the freezing part, they are quick and easy to throw together! These are a perfect treat to keep in the freezer this summer for those hot and humid days!


Greek Yogurt Fudgesicles

Serves: 8
Ingredients
  • 2 cups plain Greek Yogurt
  • ½ cup cashew milk or other nut milk
  • 3 tbsp unsweetened cocoa powder
  • 1 cup Enjoy Life chocolate chips
Instructions
  1. Add a large pot on the stove over medium heat and add the cashew milk and chocolate chips. Stir continuously until the chocolate chips are fully melted.
  2. Add the cocoa powder and mix until fully combined.
  3. Turn off the heat and add the Greek Yogurt. Stir until fully combined.
  4. Transfer the yogurt mixture to 8 popsicle molds and place in freezer for 3-4 hours.
  5. Remove the fudgesicle 10-15 minutes before eating or rinse the mold under hot water to easily remove it.
  6. Enjoy!
